The very stony soils with a red sandy-clay matrix enable the grapes to reach perfect ripeness while preserving a fine balance.
The warm, dry Mediterranean climate helps the grapes to ripen and remain healthy.
The harvest is triggered by checks on ripeness and daily tasting of the grapes as they approach harvest.
The grapes are destemmed and cooled to 8°C. They are gently pressed directly to extract the best juice. The juice is then cold settled for 48 hours.
