On the terroir of the Saint-Tropez peninsula

Located at the foot of the Massif des Maures, 20km from St-Tropez, this authentic 18th-century Provencal bastide has belonged to the Sauron family since 1836. This former farm of the Pères de la Chartreuse de la Verne was a vineyard long before the French Revolution.

History

Sylvaine and Guy Sauron and their children Marie and Thomas have been working the Siouvette estate since 1936.

That's 7 generations and over 180 years of dedication to excellence, with respect for the terroir and farming practices.

Guy Sauron: A charterhouse turned vineyard, a legacy carved in every stone

“This former monastic site is now a family estate, rooted in schist soils. Through the story of the family who lives and works here, a narrative gradually unfolds—one of minerality, tension, and the freshness these soils bring to the wines. A story of grounding and transmission.”
Thierry Desseauve

In this episode of *Classe de maître*, Thierry Desseauve and Guy Sauron, owner of Domaine de Siouvette near Saint-Tropez, tell us about *L’Exception*, a rosé from Provence you’ll be eager to discover this summer.

Vineyard and terroir

Surrounded by cork oak and heather, the estate extends over 20 hectares facing south.

The vines are planted on slopes with schistose soil, clay on the upper part of the estate, and gravel near the river (on the parcels planted with white grapes).

Wine-making

Selection by plot. Hand-picked only in the morning.

Pellicular maceration for a few hours in an inert atmosphere for rosé and white wines.

For reds: Aged on fine lees until bottling. Aged in French oak barrels for 6 months.
