Tasting
Deep, intense red color.
A full-bodied, rich, spicy wine for laying down, with aromas of very ripe black fruits (blackcurrants, blackberries, prunes), empyreumatic notes and velvety tannins.
A toasty, discreetly woody finish punctuates a clean, crisp structure.
Food & Wine
Enjoy with grilled entrecôte steak, monkfish Armoricaine-style, wild boar Provençal-style, or raw-milk cow's milk cheeses...
Serve at 16°C
VINIFICATION
After precise pruning to control yields, and careful monitoring of ripeness with weekly berry tastings, the grapes from the parcel selections are placed in small open vats with punching down, pumping over and delestage. The grape varieties are aged separately: the Syrah in Burgundy barrels, 20% of which are new oak, and the Mourvèdre in demi-muids, 10% of which are new.
