VINIFICATION

The grapes are harvested at night, by hand and by headlamp. After pressing on arrival at the winery, the free-run and first press juices are cold-settled before maturing on fine lees in stainless steel vats.
On fine lees to bring out aromas and structure.

TERROIR

The proximity of the sea brings the freshness of the sea inlets and favors slow, gradual ripening of the hand-picked berries.
