VINIFICATION

Manual harvesting. Traditional vinification. Long 30-day maceration with manual punching of the cap.
70%: 9 months ageing in amphora and concrete eggs. 30%: 9 months barrel ageing to soften tannins.

TERROIR

Close to the Mediterranean Sea, the vineyard benefits from a terroir composed mainly of sand with excellent drainage capacity. The climate is Mediterranean, with exceptional sunshine. The strong maritime influence and the mistral wind are favorable to grape ripening under optimal phytosanitary conditions.
