VINIFICATION

The grapes are destemmed and cooled to 8°C. They are gently pressed directly to extract the best juice. The juice is then cold settled for 48 hours. Fermentation takes place at controlled temperatures (18°C).

TERROIR

The very stony soils with a red sandy-clay matrix enable us to obtain perfectly ripe grapes while preserving a fine balance. The warm, dry Mediterranean climate favors grape ripening and good health.
