VINIFICATION

traditional maceration for 10 to 15 days, optimizing polyphenol extraction by programming pumping-over cycles. Fermentation temperature is around 28°C.

TERROIR

The very stony soils with a red sandy-clay matrix enable us to obtain perfectly ripe grapes while preserving a fine balance. The warm, dry Mediterranean climate favors grape ripening and good health.
