CALIFORNIE - ORIN SWIFT - Palermo 2019
Dave Phinney is undoubtedly one of Napa Valley's greatest oenologists: in 1998, he founded a range of Californian wines called ORIN SWIFT, featuring provocative, bold labels that are veritable works of art. Each has its own story and inspiration.
Palermo is a Cabernet Sauvignon from the finest plots in Napa Valley.
The photo by National Geographic photographer Vincent J. Musi depicts a mummified 16th-century priest in Palermo. To Dave Phinney, it's a symbol of strength and dignity, which he compares to his respect for Cabernet.

Tasting
Magnificent bouquet of spicy plums and blackcurrant liqueur, followed by notes of rum and walnut chocolate, dried rose petals, fresh oregano and raspberry jelly.
Powerful on the palate, with well-supported, creamy, supple tannins, a lovely layer of caramel fills the palate completely. Hints of Arabica and Belgian chocolate truffles adorn the very long, almost spectacular finish with aromas of wild black berries and exotic woods.
Food & Wine
Wines for celebration and pleasure. To be enjoyed around a good table or simply in front of the fireplace. When ripe, they offer finesse and go best with more refined dishes. Young and concentrated, they will easily support a spicier cuisine.
Best served between 16 and 18 degrees. Tip: Uncork the bottle an hour before serving, taste the wine and decide whether to decant.

VINIFICATION
To achieve optimum ripeness, the grapes are left on the vine for relatively long periods. The bunches are all vinified separately, so that after fermentation, the best blend can be composed, based on different barrels. Before being bottled, the wines are first aged in barrels for a certain period of time.Aged 12 months in French oak, 38% new
