VINIFICATION
Age of vines: 28 years After a rigorous selection, the grapes are harvested manually and carefully transported to the cellar. After destemming and passing through a vibrating table, the berries are carefully sorted (green or dehydrated berries are eliminated before being sent to the crusher). After crushing, the grapes are transported by gravity into the vat, in which a cold pre-fermentation maceration begins in anaerobic conditions for 6 days at 6 0 C-8 0 C. Then, fermentation took place at 27°C-28°C for 15 days with three daily “pumpings”. The wine is left on its lees for an additional 17 days to strengthen its structure.Aged in French oak barrels (25% new) for 14 months.
