VINIFICATION

a traditional maceration of 10 to 15 days is carried out with optimization of the extraction of polyphenols by programming the pumping over cycles. The fermentation temperature is around 28°C.

TERROIR

Land of sand, sandstone and quartz of the Maures plain: the soils are grassed and plowed to preserve a varied microfauna. Use of natural treatments following lunar cycles.
