VINIFICATION

Hand-picked in small crates, vinified with indigenous yeasts in vats after a long 7-day maceration in whole bunches, natural malolactic fermentation, and nothing else. A natural, low-alcohol wine with no added sulfites.
Aged in natural sandstone amphorae for 2 months.

TERROIR

Terroir of sand, sandstone and quartz from the Maures plain: the soils are grassed and ploughed to preserve a varied microfauna. Use of natural treatments following lunar cycles.
