VINIFICATION

Harvesting takes place exclusively at night, between 4am and 9am, to preserve the aromatic potential of the grapes. Direct pressing of the grapes in an oxygen-free environment is followed by low-temperature fermentation and ageing on fine lees to impart fullness and complexity.

Located in the heart of the Golden Triangle, an exceptional Côtes de Provence terroir between Cuers, Pierrefeu and Puget-Ville in the foothills of the Massif des Maures.
